I recently muddled my way through this, and just worked out all the kinks.
My goal was to create a 1-click workflow where I could right click a file (or files) and send them to a predetermined email address without having to do another step. It also puts the file name(s) as the subject line of the email. (with commas! 🙂
Here's how it goes: (This is for Snow Leopard+)
In Automator, New> SERVICE

3) add 'Run AppleScript' (Creates subject name, quoted at bottom for legibility)

5) add 'New Mail Message' (enter recipient for this service, and drag the variable 'SUBJECT' into the subject line
6) add 'Get Value of Variable' (choose variable FILES)
7) add 'Add Attachments to Front Message'
8) add 'Send Outgoing Messages'
9) Save. Give it a service name (Send to John) etc..

If you want to just have one service, and enter the email address & send each time, basically replicating the existing Finder>Services>New Email with Attachment, then just do step 1, add 'New Mail Message' and then add 'Add Attachments to Front' (Then you could right click the files)
